Requested recipes from Maundy Thursday dinner:
Island Pork Tenderloin
- 2 tsp salt
- ½ tsp pepper
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp cinnamon
- ¾ cup DARK brown sugar
- 2 Tablespoons finely-chopped garlic
- ½ to 1 tsp Tabasco sauce
2 ½ lb pork loin
2 T olive oil
Combine rub ingredients; whisk until well blended.
Combine glaze ingredients, working with hands until smooth (mixture will be thick).
Pat rub ingredients onto pork; using olive oil, rub into all surfaces of meat.
Place pork on baking sheet. Lay glaze mixture on top.
Bake at 275 degrees for approximately 1 hour or until internal temperature reaches 150 degrees.
Remove from oven and allow to “rest” for 10 minutes before slicing.
Wild Rice with Cranberries, Green Onions and Toasted Pecans
- 3 C (24 oz) chicken broth
- 1 C (8 oz) wild rice
- 4 T butter
- scant teaspoon salt
- 4 oz dried sweetened cranberries
- ¼ C chopped green onions
- ½ C toasted pecans
Combine broth, rice, butter and salt in saucepan. Cover and cook according to rice package directions or until liquid is absorbed. Remove from heat and stir in craisins, onions and pecans. Recover and allow to stand 5 minutes until craisins are “plumped.”
